The weather is changing and so should your menu!
Spring is the perfect time to give your menu a refresh with trending drinks and flavours perfect for the spring and summer months.
In spring we see a rise in fruity flavours with even more people opting for iced drinks. Fruit coolers, smoothies, fruity bubble teas and of course fruit matcha.
Fruit coolers
We’ll see fruit coolers pop up on menus through the spring and summer months, with classic flavours like peach and lemon returning every year, with hibiscus and mango popularity on the rise.

Strawberry Mango Cooler
Ingredients:
Strawberry puree, mango puree / syrup, citrus flavoured sparkling water (or soda), Ice, lime slices
- Mix together 30ml of strawberry puree and 30ml of mango syrup
- Add your strawberry and mango mixture to the bottom of your serving glass and add ice
- Pour over your citrus sparkling water
- Add slices of lime to garnish and enjoy!
Bubble Tea
Bubble tea popularity is showing no signs of slowing down with cafes and restaurants all over the country adding it to their menu. This spring it’s all about fruity bubble tea with refreshing popping boba the flavour creations are endless.
Passionfruit Pink Lemonade Bubble tea
Ingredients:
Jasmine tea, passionfruit syrup, strawberry popping boba, pink lemonade, ice
- Place your tea bag and 50ml of hot water to a glass and leave for 30 seconds
- Gently remove your tea bag
- Pour your brewed tea into a large glass
- Add 25ml of passionfruit syrup into the tea and stir
- Add your strawberry boba to the glass
- Add 250ml of cold pink lemonade
- Add ice
- Pop in your straw, stir and enjoy!
Matcha
The matcha trend is here to stay with it becoming the it-girl drink for the spring and summer months with fruity flavours taking over matcha menus. Matcha has become a menu must have with Gen Z and Millennials constantly looking for their next matcha fix!

Strawberry Matcha Latte
Ingredients:
Strawberries, matcha powder, milk, granulated sugar, water
- Add strawberries and granulated sugar to a glass and crush until pureed (you can also blend them)
- Add your ice cubes
- Pour over your milk, leaving room for your matcha and set aside
- Sift your matcha powder into a small bowl, add hot boiling water and whisk for 30 seconds until it’s frothy
- Pour your whisked matcha into your glass, stir and enjoy!
